As I am moving out soon, I have been spending a lot of time experimenting with foods and creating masterpieces to take with me along my adventure to independence. So here is my Vegan Curly Fettuccini Bolognese. I really like the idea of mindful cooking without measurements, so each meal is a custom to how you like it. In most places I have avoided using measurements to remove the restrictions of measurements and allow the experimentation and creativity of cooking flow. Now lets get down to cooking!
1/2 packet of San Remo Curly Fettuccini
Extra Virgin Olive Oil
2 cloves of garlic
5 Cherry Tomatoes
1 Tin of tomatoes
1 Medium Sized Carrot
6 Stalks of Broccoli
1 large onion
1/4 Red Capsicum
1/4 Green Capsicum
1 tin of lentils
1 Jar of Dolmino Sugar Free Tomato Pasta Sauce
And really any other veges you wish to add!
In a large saucepan I place the curly Fettuccini, salt and fill the saucepan half way with room temperature water and add about 3teaspoons of salt to avoid the pasta sticking to the pot.
Place Large saucepan on high heat and allow water to boil.
Once the water is boiled the pasta will take 12 minutes to cook.
Stir pasta on regular occasions to avoid the pasta sticking together.
Dice one whole onion and place into a medium size saucepan.
Add Extra virgin olive oil to avoid vegetables sticking to the bottom of the pan.
Dice 3 mushrooms, Capsicum, Cherry tomatoes, broccoli, carrot, garlic and zucchini.
Cook until onions until brown and/or veges are soft.
Add Lentils to vegetable mix and stir through well, allow to cook for another 3-4mins to allow lentils to cook.
Once lentils are cooked add sugar free pasta sauce and tinned tomatoes to make create sauce.
Stir the tomatoes and the pasta sauce throughly in with the veges and allow to simmer for about 5-6mins or until sauce is heated all the way through.
Add a pinch of salt if desirable.
By Now your pasta should be cooked. Strain water out of the saucepan.
In a bowl combine your curly fettuccini and bolognese!
And we are done!!
Add salt and pepper if you wish to season with some vegan cheese (or regular cheese if you aren’t vegan).
